Green Warrior Porridge (savoury porridge with spring greens, balsamic asparagus, courgettes & garlic)

1tbsp Morning Elixir                                                                                                                                                                                                   1/2 courgette
1 garlic clove finely chopped
1 cup gluten free oats (we love Rude Health sprouted)
1/2 cup quinoa (substitute the oats & quinoa for buckwheat if grain free!)
1tsp Marigold Vegan Vegetable stock powder
1/2 cup coconut mylk
1 cup of filtered water (add more or less dependant on your preferred porridge consistency, just add a little at a time as it cooks)
1tbsp balsamic vinegar
Squeeze of fresh lemon juice
Chopped fresh or dried basil
Salt & Pepper
Dash of Apple Cider Vinegar
3 Asparagus Tips
Large handful of kale or spring greens

Add all ingredients bar the asparagus & greens/kale to a medium pan and bring to the boil gently. Simmer for 15-20 minutes
dependent on whether you prefer your porridge with a little bit of bite or with a softer texture. Towards the end of the cooking
time, stir in your kale/greens and check your seasoning. Griddle your asparagus tips for a couple of minutes in a morsel of coconut oil. Pop the porridge into your favourite bowl and top with the asparagus tips. Feel free to experiment with toppings such as savoury granola, coconut yogurt, sauerkraut and anything you fancy!
